Ask "the SwimMom" Holiday Edition

One thing that you may not know about me is that in my senior year of high school I worked at Baskin Robins. I scooped, dipped, mixed, and created ice cream concoctions for almost an entire year. It was the best and worst job I ever had.

My favorite ice cream desserts were malts. Ummmm!!!

That is why when I came across this recipe a few years later I couldn't wait to try it. That is why after I tried this recipe it became one my favorite cookie recipes. Below is the recipe for:




"Chocolate Malted Cookies"

1 cup butter-flavored shortening
1-1/4 cups packed brown sugar
1/2 cup malted milk powder
2 tablespoons chocolate syrup
1 tablespoon vanilla extract
1 egg
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1-1/2 cups semisweet chocolate chunks
1 cup (6 ounces) milk chocolate chips

In a mixing bowl, combine shortening, brown sugar, malted milk powder, chocolate syrup and vanilla; beat for 2 minutes. Add egg. Combine the flour, baking soda and salt; gradually add to creamed mixture. Shape into 2-in balls; place 3 in. apart on ungreased baking sheets. Bake at 375 for 12-14 minutes until golden brown. Cool for 2 minutes on pan before removing to wire racks to cool completely. Yield: about 1-1/2 dozen.

Just typing this recipe out has made me hungry for Christmas goodies. Fudge, homemade peanut butter candies, cookies, cakes and the list goes on and on. This time of year is the most tempting time of the year for a very good reason. There is so much great food.

Friends, neighbors and families also all share. Our house becomes a bounty of Christmas goodies. It is so fun to open your door to friends bearing a plate of goodies. I am very much looking forward to it.

That being said, A few nights a go I gave in to some Christmas cheer and shared an ice cream cone with my kids. I reset the counter and have been back on track (nope, nobody caught me or even noticed until S. ratted on me today). However, the days leading up to Christmas are just going to get more and more challenging. I LOVE CHRISTMAS GOODIES!

Now I am hungry and in the mood for Christmas goodies. I went to a small party (4 girls, we do this every year in December) last night where we ate until sweat was forming on our upper lips. Yep, we piggied out completely. But boy did we manage to make some great goodies ;-)

Alright, I have two recipies, both are tastey, easy, and somewhat impressive. First, English Toffee alla Willow...

English Toffee --
Melt together equal parts sugar and butter. Stir over high heat until mixture is the color of a brown paper bag. Pour into a buttered pan to cool. Shatter into peices. (if you prefer toffee topped with chocolate and nuts... just spread pieces of a chocolate bar, or chips, onto the candy while it is still hot. Then top with nuts)

I have NEVER used a candy thermometer for toffee. However, to make sure you cook it long enough it is best to have a paper bag right beside you to use as a guide. Undercooked and overcooked candy is NASTY!

Oh, and this recipe you could totally make and stick to your sugar-less goals. It doesn't require quality sampling.

One last thing... don't try to make candy in the rain. It is just sugary and gross. Save this recipe for a nice clear day.

Second, Holly Cookies.

Holly Cookies
Melt together:
32-34 marshmallows and 1 cube of butter.
Stir in: 1 tsp vanilla and 2 tsp green food coloring.
Add: 4- 4 1/2 cups corn flakes, stir and remove from heat.
When nicely coated, drop by spoonfuls onto waxed paper. Top each cookie with three red hots to resemble holly berries.

Again, totally fast and easy. These are pretty much no fail cookies. However, beware!! These cookies will turn you green inside and out. You can expect green thumbs, teeth, tongue, and eventually poo.

Yeah, it is gross... but I wouldn't want to not warn you and then have you think you had some sort of odd illness!

Okay, apparently I am not done with recipe suggestions....

Faux Fudge (I call it faux because it is just too easy to really be candy.)

Melt together:
2 packages milk chocolate chips and
1 can sweetened condensed milk
Add 2 tsp vanilla and remove from heat.

Pour into a buttered 8x8 pan. Nuts, cherries, or anything else you like can be added while the fudge is hot. Also, as my spouse prefers dark chocolate, this recipe can be adapted using 1 bag of milk and one bag of dark chips.

Joy Balls (the are all kinds of joyful!)

In a large mixing bowl combine:
2 boxes powdered sugar
1 bag sweetened coconut flakes
1 stick of softened butter
1 can sweetened condensed milk
1 tsp. Almond flavoring/extract
1 1/2 cups finely chopped nuts

Roll into balls and chill for several hours.

Melt together:
1 bag chocolate chips (dark... use dark chips!)
1/4 (that's one 4th...) parafin wax

Using a skewer dip the balls into the melted chocolate, then let dry.

The coconut mixture is really sweet. Using dark chocolate chips cuts the overpowering sweetness of this candy.

One final tip, don't try and make these when you are sick. I added additional almond flavoring because I couldn't taste well, 3 teaspoons to be exact. It was still really good... but really, really strong almond flavored. =)
Those cookies look delicious. I'll have to try them. This year, we're making screaming yellow zonkers (which is caramel corn) for friends and neighbors. The recipe is actually in the family cookbook. And yes, I am too lazy to type it out.

Pinewood Derby or Bust!

If there is one thing that Brent and I both agree on.  One thing that we both believe is essential to the proper development, growth, and raising of a son. That no boyhood would be complete with out.  It would be participation in the Pinewood Derby.   Yes, on this one thing Brent and I are in total agreement.  A boyhood is not a true boyhood until a boy has built a pinewood derby car and then competed in a pinewood derby.  It is that important!  I'm sorry if you have never had the opportunity to live in a house filled with the air of pinewood derby. The Kids Today

S. is now 11 years old and is counting down the days until she turns 12. She is in the fifth grade and says math is her favorite subject. She stays pretty busy with swimming and soccer. This past year in addition to a regular AYSO team she has been competing on an All Star Team. She has really enjoyed it and is really looking forward to a tournament that will take place in Hawaii this July. She still loves swimming and is still competing when she can. A. is 9 years old and is the professor of the house.  He is our silent man whose brain is in constant motion.  He reads and reads and reads and soon will read me out of house and home.  He enjoys video and computer games, and he loves playing sports.  In January he made the city swim team and continues to play soccer, basketball, and anything that I let him.  Al will soon be eight.  As in next week soon.  The best part of school she says is 3:25 when pressed for a better answer than that she say...
